1. start cooking rice
2. slice a 5 cm piece of ginger and a medium onion into thin slices
3. mix the following ingredients into a cold pot, as well as the ginger and onion:
- 150 mL dashi (1 packet per 750 mL water)
- 2 tbsp soy sauce
- 1.5 tbsp mirin
- 1.5 tbsp sake
- 1 tbsp white sugar
- 1/2 tbsp brown sugar
4. Bring to a boil then reduce to a gentle simmer for 10 min
5. Slice green onion into thin circles for later
6. Add beef slices and simmer for another 5 min
7. Serve over rice with the onions and raw egg yolk on top
