1. dice one onion as small as you can
2. cut half of another onion into thin slices
3. Mix the following into a bowl and knead:
- the diced onion
- Two eggs
- 50g of flower
- 80 mL of milk
- 1 tablespoon mirin
- 3/4 tablespoons salt
- Salt and pepper
- Nutmeg
4. Mix the following into a separate container:
- 50 mL red wine
- small cube of chicken broth
- 1 tablespoon of ketchup
- 1 tablespoon of tonkatsu sauce (or similar)
- 1 tablespoon of sugar
- 1 can of tomato sauce
5. Add olive oil to the frying pan on high heat
6. Mold patties and lay them out on medium heat
7. Flip patties in the order they were laid out to brown both sides
8. Pour the hamburger sauce in once they're fully browned
9. Add the sliced onions and shimeji mushrooms
10. Cook over low heat for 20-25 min until ingredients are soft
