### stuff you need - flour - baking powder - salt - sugar - lemon - butter - 3 eggs - vanilla extract - buttermilk - small bowl - large bowl - frying pan / griddle - 1/4 cup - 3/4 teaspoon - whisking tool ### recipe 1. in a small bowl, whisk 0.75 cup of flour, 1.5 teaspoon baking powder, 0.75 teaspoon fine salt 2. in a separate large bowl, add 0.25 cups of sugar and grate a lemon over the bowl and gently rub the zest into the sugar 3. add 1.5 teaspoon vanilla extract and whisk until evenly moist 4. add 3 eggs and whisk until foamy 5. add 0.75 cups of ricotta, 2 tablespoons of melted butter, 0.25 cups of whole buttermilk, and whisk until well blended 6. add flour mixture and stirr until no traces of flour remain 7. warm up and generously butter the griddle 8. add spaced 0.25 cup drops for each pancake and cook until tops are bubbling and bottoms are golden brown 9. flip and cook for 2 more min until the other sides are brown 10. repeat with remaining batter 11. serve warm with maple syrup and fruits ![[Pasted image 20260510101613.png|300]]
