1. boil a large pot of water 2. sprinkle in about 100g of noodles per portion for cold noodles (half for hot soup) 3. stir at a gentle boil, then lower heat to a simmer 4. cook for 7-8 min (or follow packet instructions), test firmness starting at 6 min 5. drain noodles and put them in an empty pot and cool them with cold water 6. rinse the noodles vigorously, changing water several times until it stays clear 7. drain the noodles well serve cold or hot (by reheating the cooking water) 8. for the dipping sauce, follow mentsuyu container instructions and adjust concentration by taste
